Mac and Cheese & Chicken Roulades stuffed with Cheese

I've decided to start a new series of blog posts here just to give myself some moral boost that will inspire me to cook more. I like cooking and taking pictures of food. Double win! Except, my family is being really unsupportive of my cooking cos they only tend to eat chinese food and my parents are the kind of people that will go to the SAME restaurant every week and order the SAME dishes.

So now, I'm only really cooking when J comes over and there's at least 4 hours to spare. Kinda hard to find time like that really.


J became my sous chef lol. I got him to help me mince garlic, slice chicken chops and dice tomatoes. Must say he did a pretty good job at that. (: HAHA. I wrote 'he did a pretty good chop at that' initially before I realised the typo.


J came over to surprise me with... himself. Nah, he came over to see our hamsters and to help change the bedding for them. Aww. I went on a whim and just said that I felt like cooking and so I did. Decided to make some Mac and Cheese and Chicken Roulades stuffed with Cheese that day. First time cooking them so it was pretty exciting since I didn't know how it would turn out.



This was the Mac and Cheese before it went into the oven. Layered some extra cheddar on the top to give it a superb cheesy crust!


Tadah! Chicken Roulades with Cheese Filling. They are essentially chicken chops with cheese on them and I wrapped them up with a slice of bacon. The recipe said Chicken Breasts but I went ahead with chicken chops since the supermarket didn't had any available. Good decision though! Chicken chops tend to be more tender. Popped some cherry tomatoes in there as well.



J said they were really good so they must be (:
But they're really sinful though, I mean, bacon and cheese itself is already a sinful combination. Plus, we had them with Mac and Cheese LOL. MORE CHEESE!



So glad with how they turned out!


I cooked enough servings for 4 people and we finished most of it and reserved a bowl for J's mom. After eating one entire bowl, I was SO STUFFED. Not even kidding. I think 3/4 of the heart-shaped bowl is enough to fill you up. The bowl is cute right? I got them from Shanghai for $2. CAN YOU BELIEVE IT.


The crust had amazing texture and it was so crispy and cheesy! <3 I had to portion out my crust nicely so I could have some of them with every bite I took. There was supposed to be fried bread crumbs to sprinkle on top of our Mac and Cheese as well but they turned out burnt. Guess who's responsible for that? haha. Had to take a shower so I entrusted J with pan frying breadcrumbs which you think cannot go wrong but it can. LOL.

Gareth Emery at Zouk Members

Here's some really backdated photos for the night Gareth Emery came to our shores!











Ming got some Mumm Champagne and they came in lit up champagne glasses! AWESOME. The other time some of us saw some angmohs carrying them in Velvet Lounge, we got damn jealous cos they were so pretty lol. I don't know how the mechanism works actually because the glasses somehow stay lit for a few minutes even after you've finished the drink and there's no liquid inside.


We can have pretty bubbly too! (:


And let me just say this: the crowd was CRAZY that day! IT WAS SO PACKED!

To make the night even crazier, I have awesome friends who indulge in crazy antics when they're drunk HAHA. Here's some awesome video footage when Concrete Angel was playing!!

March Update on My Life.

Hi guys. It's 1:49am now and I really should be sleeping but I've recently gotten into a flow of doing work so I've been sleeping slightly later than usual. Shouldn't be doing that anymore since as of late, I've been getting fainting spells. (DENG DENG DENG) Yeah. My body is weak like such. I almost fell off my chair one day while I was teaching cos my ears started ringing and all I could see was a piece of fuzz in front of me for about 40sec to a minute. Thank god the kid was doing her work and thank god I had a table ledge to grab on to. I really wish I could be joking about this but I'm not. fml.

If you're my friend on FB, you would probably know that I have recently adopted 2 hamsters.


We renamed them Nugget and Pancake (after Hamburger!) LOL. I came up with the names actually, thought they sounded cute and also because they're brown in color. (As I'm typing this right now, Nugget just flipped the green container looking for food and I'm going to feed him some treats right now).  Pancake is quite wussy I must say.. he shrieks at times for no good reason. haha! They've been a great addition in my and J's lives and we've been parenting them like crazy. Buying all sorts of treats for them, cleaning them in bathing sand every now and then and trying not to feed them way too much food. They're boys by the way, so they're forever stealing each other's food and disturbing each other.

Just came back from watching Evocation2012 and I miss dance. It's that wave of envy whenever you catch a dance performance and then you just feel like going back into it. But I can't due to medical reasons. Shall suck it up and stay positive and work towards my goal in the meantime. I wanna be a mad workaholic the next few months so if you have any lobangs, please inform me haha. In the meantime, also doing things I like such as updating this space here just for my own pleasure. Somehow I get a kick out of reading my life story on the internet instead of writing them down. Thank you to readers leaving comments cos they're unexpected and they make my day. I'm gonna be religious about cooking more often as well so expect more home-cooked posts soon.

Last Day in Shanghai (Walmart Visit & Local Chinese Food!


Last day of Shanghai ):

Woke up bright and early to take the tuk tuk to the nearby Walmart for some last minute shopping. I was really interested in how China supermarkets would look like and I wasn't disappointed with what I saw.


Giant Microwavable Drumsticks.
These sticks are HUGE! No kidding. I wonder if pet owners use those to feed their dogs since it's so convenient.


Shelves and shelves of goodies.


If you like Mochi, you will be interested in these. They are fruit mochi! Best of all, they're frozen!


J's fav Hershey's. Sadly couldn't find any of these back in Singapore though..

 


Bought some pretty decorative stuff back home and microwavable POPCORN! Speaking of which, I have yet to try it yet -_- I should soon just in case there is an expiry date on it.



Settled for some local chinese food a stone's throw from his hostel before our flights. I was flying back home and he was flying to Hainan to meet his family.



This egg dish reminds me of my China trip when I was in Primary 5 I think. I was on some student exchange thing with a bunch of my friends in Suzhou and we had this almost every meal!



I think these are fish strips. Actually, up till now, I have no idea what exactly are these but I know that they are fish LOL. :/

J showed me his bike of which I was supposed to sit on and he was supposed to cycle me around but we never got around to doing so during the trip. I think partially because he forgot and I was hoping he wouldn't remember cos I have a phobia of pillion riding. I really hate it. The bicycle is so unstable at times and my life's like in the hands (or in this case, legs) of someone else!

Okay lah, it's because I had a terrible accident and my leg got stuck in the wheel before when I was 8. Doc had to pry open the entire metal wheel to get my leg out -_- Never liked someone cycling me around after that.


Successfully carried all our luggages down from the 6th floor once more and hopped into a cab to the airport.

I took the plane home on my own and thank god the guy sitting next to me wasn't very noisy.
